High Five For Friday!

Friday came up quick this week! I think having New Years Day off from work really threw off my week!

1. Happy 2013! I spent NYE at home with Andrew and then had a relaxing day off from work on New Years Day! I made some festive Champagne Cupcakes to start of the new year!

2. Goodbye Jillian! This was a bit of a bittersweet week in that it was Jill's last week at NYP. I'm so happy for her {new job, new car, and soon, a new apartment!} BUT, she will certainly be missed! It'll be weird to have any empty cubicle behind me and our lunch trio will now only be a pair. *tear* *tear*....

3. Dinner & a show! Andrew took me to dinner at Rosa Mexicano and to see War Horse on Broadway!!! We had amazing seats {only a couple rows from the stage!!} and the horse puppets were incredibly realistic!! It was by far, the best show we've seen! Thanks for such a great Christmas gift, hunnie!

4. More Cupcakes! I used this Food Network recipe as inspiration, but cheated a bit. I used a box of yellow cake mix {any brand will do, but I used Duncan Hines}and added in the juice and zest from two lemons. 

I made the blueberry compote as per the recipe, but reduced the sugar to about 1/4 of a cup. {You don't need much sugar with all the sugar in the frosting!} For the frosting, I doctored up some store bought vanilla frosting {again, any brand will do, but I used Duncan Hines} by combining it with 8 ounces of softened cream cheese, a stick of butter, and about 1/4 cup of powdered sugar. They came out delicious, but sadly, I forgot to take pictures as I was baking :(

5. Happy 21st Birthday Alyse!! If I had a sister, I'd want her to be Alyse! Aimee is so lucky to have such a fun, classy sis! Celebrating with a classy dinner at Corsino tonight!
